CHOCOLATE CHIP COOKIE RECIPE — Makes about 120 cookies
12 oz. margarine
8 oz. sugar
8 oz. brown sugar
4 eggs (room temp)
2 tsp. vanilla extract
1 lb. 4 oz. flour (flours differ, best to weigh for large recipes)
1 tsp. salt
2 tsp. baking soda
1 lb. chopped pecans
1 lb. 8 oz. chocolate chips
Preheat oven to 350 degrees.
Cream the butter with both sugars until well blended. Add eggs and vanilla and cream until fluffy.
Combine dry ingredients and add to mixture on low speed. Add nuts and chips and blend together.
Form into rounds the size of golf balls (2 ounces) and place 3 inches apart on the baking sheets, pressing down slightly onto parchment lined baking sheets. Bake at 350 degrees for about 10 minutes or until golden brown and set. Rotate pans and racks about ½ way through baking time for uniform baking.
Do not overbake these cookies — they may seem a little underdone (slightly soft in the center) but will crisp as they cool.
Cool on racks.
